Overview of Ingredients

Fresh milled flour
This is the star of the show, bringing that signature flavor and rustic texture to these soft breadsticks. If you can’t get freshly milled flour, unbleached all purpose flour will work as a good substitute, though the flavor won’t be quite as vibrant.

Active starter
Active sourdough is necessary here as it acts as the natural leavening agent and provides that classic tangy flavor.

Garlic
Garlic powder gives that punchy, aromatic flavor. Minced garlic can also be used here for an even stronger garlic flavor.

Butter
Unsalted butter lets you control the salt level, but if all you have is salted butter, that’s fine too. You can also use a high-quality olive oil for a lighter, Mediterranean twist.

Tips for Success

#1 Don’t rush the fermentation
Allowing your dough enough time to rise slowly enhances flavor and texture. If time is tight, a warm spot close to 75°F works well, but a slower, cooler rise overnight is even better for those tangy notes.

#2 Brush butter while warm
Apply the garlic butter as soon as your breadsticks come out of the oven. The warmth helps the butter soak right into the crust for maximum flavor and that inviting shine.

#3 Light dusting of flour for shaping
When rolling and shaping the dough, use just a little flour to keep it from sticking without drying out the dough. Too much flour can make the breadsticks tough.

#4 Use parchment paper or silicone mats
These help prevent sticking and promote even cooking without the need for extra oil or butter, keeping your breadsticks light and delightful.

Troubleshooting Common Problems with this Recipe

Dense Breadsticks
If your breadsticks come out dense, ensure your sourdough starter is bubbly and active. Also, avoid over-kneading the dough, which can tighten the gluten too much and reduce rise.

Butter Doesn’t Absorb Well
Make sure to brush the garlic butter onto warm breadsticks right out of the oven so it melts in nicely. If the breadsticks cool down first, the butter will sit on top rather than soaking in.

Breadsticks Stick to the Pan
Use parchment paper or a silicone baking mat to prevent sticking, or lightly grease your baking sheet. Avoid using too much extra flour when shaping to keep the dough moist and pliable.

Garlic Flavor Too Mild
Try using fresh garlic cloves instead of powder for maximum flavor. You can also gently warm the garlic in the butter to infuse more deeply before brushing.

Breadsticks Bake Unevenly
Space the breadsticks evenly on the tray and rotate the pan halfway through baking. Make sure your oven rack is centered for consistent heat distribution.

Freezing & Storing Leftovers

Freezing:
For longer storage, wrap the cooled breadsticks tightly in plastic wrap and place them in a resealable freezer bag. They keep well for up to 3 months. To reheat, thaw on the counter and warm in the oven at 350°F until soft and fragrant.

Storing:
Store leftovers in an airtight container at room temperature for up to 2 days. To refresh, heat them briefly in the oven or toaster oven to bring back their crispiness.
