Did you know that whole grain wheat has 40 of the 44 known essential nutrients needed for life? It is also high in fiber, protein, minerals and phytochemicals.

Wheat berries are made up of 3 parts:

(1)Bran - outer layer that is filled with fiber, B vitamins and minerals
(2)Endosperm - the starchy middle layer which has some proteins and vitamins
(3)Germ - the nutrient packed core with B vitamins, vitamin E, phytochemical, healthy fats and antioxidants.

The invention of the roller mills in the 19th century completely changed the way grains were processed.

Industrial milling strips away the bran and germ and leaves only the starchy endosperm - which is the white flour you buy from the store today.

The germ is removed because the fats within will cause the flour to go rancid and reduce the shelf life.

This process creates the white fluffy flour you are familiar with today, but it strips away most of the wheat’s vitamins and nearly ALL of the fiber.

We are left with a tasteless and lifeless flour stripped of all the nutritious parts :(

But there is GOOD news! With the help of an electric at-home grain mill, you can push a button and have freshly milled flour for allll of your baked goods.

Baked goods made from freshly milled flour are a nutrient powerhouse and EVERYONE(except those with serious allergies) should be getting them in their diet every single day.

We are not just talking about breads here, I mean cinnamon rolls, cakes, cookies, hamburger buns, dinner rolls, pie crusts and so much more!
