Ingredients
Dough:
1cupwarm water232 grams
½cupactive sourdough starter125 grams
1 ½tablespoonshoney
4tablespoonsmelted butter58 grams
2 ¼teaspoonssalt
2 ¾ - 3cupsfreshly milled hard white wheat flourfinely milled (316-345 grams)
Garlic Butter:
4tablespoonsmelted butter58 grams
1teaspoongarlic powder
1teaspoonbasil
¼teaspoonsalt
Instructions
In a bowl of a stand mixer, combine the water, butter, honey, and active sourdough.
Add 2 ¼ cups of flour and the salt and combine.
Let rest for 15 minutes.
Start kneading the dough and add the remaining flour ¼ cup at a time until the dough comes together. You want it to be smooth and not very sticky.
Knead for about 10 minutes, or until you reach windowpane.
Cover and let the dough rise. It doesn’t need to be doubled in size, just noticeably risen. This takes about 4-6 hours.
Once risen, divide the dough into 12 equal pieces.
Use your hands and roll the dough into long strips, about 6-8 inches long.
Line a baking sheet with parchment paper.
Place breadsticks on the prepared baking sheet, cover, and allow to rise in a warm place 1-2 hours until puffy.
Preheat the oven to 375 degrees F. and bake the breadsticks for 24-28 minutes until golden brown.
Mix all of the ingredients for the garlic butter and brush on the breadsticks after you remove them from the oven. Let them sit for few minutes to absorb the butter, then brush them again.
