How To Make Freshly Milled Soft & Sweet Sugar Cookie Fruit Pizza
Ingredients:
For the sugar cookie dough
- ½ cup softened butter (115 grams)
- ⅔ cup sugar or maple sugar (90 grams)
- 1 large egg
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 ¾ cup fresh milled soft white wheat flour, finely milled (228 grams)
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
For the Cream Cheese Icing:
- 8 ounces softened cream cheese (227 grams)
- ½ cup softened butter (115 grams)
- ¼ cup honey 75 grams
Fruit topping:
- Blueberries
- Strawberries
- Raspberries
Directions:
- Preheat the oven to 350 degrees F.
- In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy.

- Add the egg, vanilla, and almond extract.

- In a separate bowl, stir together the flour, baking soda, baking powder, and salt.
- Add the dry ingredients into the wet ingredients and mix until combined.

- Chill the dough in the fridge for 20-30 minutes. It should not be completely hardened.

- Spread out a sheet of parchment paper and roll the dough out on it into about a 12 inch circle. You will need to add flour to the dough to keep the rolling pin from sticking.

- Place the parchment with the sugar cookie dough onto a pizza pan or round cast iron pan.

- Allow the sugar cookie crust to cool completely.

- To make the icing, beat the butter and cream cheese together for 3-4 minutes until fully combined and fluffy.

- Add the honey and whip for another 2-4 minutes until fully combined.

- Spread the icing over the cooled crust.
