  • ½ cup water (120 grams)
  • ¼ cup honey (77 grams)
  • 2 cups heavy cream (470 grams)
  • 4 ounces cream cheese (113 grams)
  • ¾ cup powdered sugar (74 grams)
  • 2 teaspoons vanilla
  • ½ teaspoon salt
  • 4 teaspoons unflavored gelatin powder
  • 4 tablespoons water

Graham Cracker Crust:

  • 2 cups graham cracker crumbs (about 16 graham crackers) (240 grams)
  • 2 tablespoons maple sugar
  • 6 tablespoons melted butter (86 grams)

Directions

  • Preheat the oven to 350 degrees F. and grease an 11 inch tart pan.
  • In a food processor or blender, blend the graham crackers until they are fine.
