Ingredients

Sugar Cookie Dough:

  • ½ cup softened butter (115 grams)
  • cup sugar or maple sugar (90 grams)
  • 1 egg
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1 ¾ cup fresh milled soft white wheat flour finely milled (228 grams)
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt

Cream Cheese Icing:

  • 8 ounces softened cream cheese (227 grams)
  • ½ cup softened butter (115 grams)
  • ¼ cup honey (75 grams)

Fruit topping:

  • Blueberries
  • Strawberries
  • Raspberries

Directions

  • Preheat the oven to 350 degrees F.
  • In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy.
  • Add the egg, vanilla, and almond extract.
  • In a separate bowl, stir together the flour, baking soda, baking powder, and salt.
  • Add the dry ingredients into the wet ingredients and mix until combined.
  • Chill the dough in the fridge for 20-30 minutes. It should not be completely hardened.
  • Spread out a sheet of parchment paper and roll the dough out on it into about a 12 inch circle. You will need to add flour to the dough to keep the rolling pin from sticking.
  • Place the parchment with the sugar cookie dough onto a pizza pan or round cast iron pan.
  • Bake for 16-20 minutes until golden brown.
  • Allow the sugar cookie crust to cool completely.
  • To make the icing, beat the butter and cream cheese together for 3-4 minutes until fully combined and fluffy.
  • Add the honey and whip for another 2-4 minutes until fully combined.
  • Spread the icing over the cooled crust.
  • Arrange the fresh berries as desired.
