Butter
Butter binds the crust and adds a lush, buttery flavor that balances the zesty filling

Tips for Creating the Best Key Lime Pie Bars
#1 Use fresh limes for zest and juice
Always zest your limes before juicing to capture the freshest oils and brightest citrus flavor. The zest infusion really makes the filling pop, delivering vibrant aroma and taste that’s hard to beat.
#2 Press the crust firmly and evenly
When pressing the graham cracker crust into your pan, press firmly and evenly to prevent crumbling or gaps. Using the bottom of a glass or measuring cup works wonders to create a compact and sturdy base.
#3 Don’t rush the chilled set
After baking, allow the bars to cool completely and then chill them thoroughly in the fridge. This step is key to getting clean slicing and that perfect, slightly firm texture everyone loves.
#4 Use a sharp knife for slicing
When it’s time to cut the bars, use a sharp knife and wipe it clean between slices. This tip preserves the neat edges and prevents the filling from sticking, making your bars look as good as they taste.
#5 Make the sweetened condensed milk ahead
Homemade sweetened condensed milk keeps well refrigerated for up to a week, so making it a day ahead helps the flavors meld and makes the baking day less rushed.
#6 Make your own freshly milled graham crackers
Making homemade, freshly milled graham crackers for the crust creates an unbeatable flavor combination paired with the zest of the key lime filling. It’s bursting with a warm cinnamon flavor, naturally sweetened, and free of additives. Click here for the recipe!

1 ¼ cups honey (350 grams)
Whipped Cream Topping:
1 cup heavy whipping cream (235 grams)
2 tablespoons honey or sugar
Directions:

Preheat the oven to 350 degrees F.
Directions

Line a 9 x 9 or 6 x 10 inch pan with parchment paper.

Use a food processor to crush the graham crackers into fine crumbs. Or, place in a large ziploc bag and crush with a meat mallet.

Prepare the graham cracker crust by combining all ingredients together in a medium bowl.
Press the graham cracker mixture into the prepared pan in an even layer and bake for 12-15 minutes. Allow to cool completely.

If you want to make homemade sweetened condensed milk combine the milk and honey in a large pot. Simmer lightly over medium heat for 45 minutes to 1 ½ hours until reduced by half. Do not let it boil and whisk frequently. It should be somewhat thicker. Allow to cool.

Prepare the key lime filling by beating the egg yolks and lime zest together in the bowl of a stand mixer, until the eggs are lighter in color.
Add the sweetened condensed milk and beat for several minutes, then add the lime zest.

Pour the filling over the cooled graham cracker crust and bake for 20-25 minutes, until the filling is just set and jiggles slightly when shaken.

Allow to cool and place in the fridge to chill for several hours or overnight.

In a large bowl or using a stand mixer, beat the heavy cream and sugar together with the whisk attachment, just until stiff peaks form. Be careful not to over whip the whipped cream.

Spread the homemade whipped cream over the key lime filling and refrigerate for another 30 minutes.

Troubleshooting Common Problems with this Recipe
Crust Too Soggy
Make sure to thoroughly press the graham cracker crust and bake it long enough to set before adding the creamy filling. Letting the bars chill completely also helps the crust stay firm.
Filling Doesn’t Set
Be sure to whisk the egg yolks well and bake the bars just until the filling is set but still slightly jiggly in the center. Overbaking can cause cracking and a dry texture.
Sweetened Condensed Milk Separates
When making homemade sweetened condensed milk, stir constantly over low heat and avoid boiling to prevent separation or graininess.
Bars Fall Apart When Cutting
Chill the bars fully and use a hot, sharp knife wiped clean between cuts to maintain firm, clean slices.
Key Lime Flavor is Too Mild
Use freshly squeezed key lime juice and add lime zest for bright flavor. Avoid using bottled key lime juice which can lack freshness and intensity.
Freezing & Storing Leftovers
Freezing:
Wrap the bars tightly in plastic wrap and then foil or place them in an airtight freezer container. Freeze for up to 2 months. To enjoy, thaw overnight in the refrigerator for the best texture.
Storing:
Store leftover bars in an airtight container in the refrigerator for up to 5 days. They taste great chilled, so just grab a piece straight from the fridge for a refreshing snack.
