How to Make Fresh Milled Nutrigrain Bars

Ingredients:

1 ¼ cups fresh milled soft white wheat flour, finely milled (125 grams)

¾ cup rolled oats (72 grams)

¼ teaspoon cinnamon

¼ teaspoon salt 

6 tablespoons cold butter, grated (86 grams)

2 tablespoons plain greek yogurt

2 egg yolks

2 tablespoons honey or maple syrup 

1 teaspoon vanilla

2-3 tablespoons ice cold water

3 tablespoons buttermilk

1 cup blueberry jam (220 grams)

Directions:

  • Preheat the oven to 350 degrees F.

  • Add a tablespoon of cold water at a time, mixing until it just comes together.

  • The dough should be soft and wet, but not sticky. If it is still sticky, add a little bit more flour. If the dough is a little dry, add a little bit more water.

  • Roll the dough out on a floured surface in a thin layer, about ⅛ inch thick.

  • Cut into rectangles measuring 5 x 4 inches.

  • Spoon a heaping tablespoon of jam onto the center of each piece of dough, leaving about a 2 inch border on each side.

  • Gently pull the right side of the dough halfway to the center of the bar and fold the left side on top of that. Gently push the seam together and flip the bar over. Pinch the end seams down so that they are sealed.

  • Place on a baking sheet and freeze for 15 minutes then brush the tops of the bars with the remaining buttermilk.
