Overview of Ingredients

Fresh Milled Flour
Fresh milled flour brings a vibrant flavor and the best texture especially compared compared to regular flour. If fresh milling isn’t possible, you can use high-quality all-purpose flour or whole wheat flour, but milling your own will give you that extra depth of flavor.

Butter
Butter adds richness and moisture to the cookie dough, helping create a tender yet chewy texture. You can substitute with plant-based butter or margarine if dairy-free options are needed, though the taste will slightly differ.

Sugar
A mix of granulated and brown sugar lends sweetness and a touch of caramel notes to the cookies. If you prefer less sweetness, you can reduce the sugar or use alternatives like coconut sugar for a different flavor profile.

Egg
Egg acts as a binder and adds moisture to the dough, helping the cookies hold shape. For egg substitutes, try flax eggs or commercial egg replacers if vegan baking is your goal.

Vanilla Extract
Vanilla extract enhances the cookie’s flavor with its warm, aromatic notes. Almond extract or other flavorings can be a fun twist if you want to change it up.

Ice Cream
Choose your favorite ice cream, whether it’s traditional flavors like chocolate or mint chip or something more unique. For a dairy-free version, use plant-based or sorbet options that hold up well when sandwiched between cookies.

Tips for Success

#1 Chill the dough
Chilling the cookie dough before baking helps prevent spreading and ensures a thicker, softer cookie that’s perfect for ice cream sandwiches. Aim for at least an hour in the fridge or overnight if you have time.

#2 Use parchment paper for baking
Line your baking sheets with parchment paper or silicone mats to stop cookies from sticking and to help them bake evenly. Plus, cleanup becomes a breeze, making the whole process more pleasant.

#3 Wrap sandwiches tightly
Once assembled, wrap each ice cream sandwich in plastic wrap or parchment paper to keep them from sticking together and to preserve freshness in the freezer. This also makes portion control easy.

Troubleshooting Common Problems with this Recipe

Cookies Spread Too Much
Make sure your dough is well chilled before baking; soft dough tends to spread and lose shape. Also, check your oven temperature with an oven thermometer to ensure it’s hot enough, as too-low heat can cause spreading.

Cookies Are Too Hard
Avoid overbaking by removing cookies as soon as the edges start to turn golden. Letting them cool on the baking sheet helps them set without becoming tough.

Ice Cream Melts Too Fast When Assembling
Work quickly and have a cool surface ready to assemble the sandwiches. Pre-freezing the ice cream slightly helps it hold its shape during assembly.

Sandwiches Are Difficult to Eat
If your cookies are too thick or the ice cream is too soft, it can get messy. Try flattening cookies slightly before freezing, and keep the ice cream firm but scoopable.

Freezing & Storing Leftovers

Freezing:
After freezing the ice cream sandwiches, cut each one and wrap individual ice cream sandwiches in plastic wrap or sheets of parchment paper and place them in a freeze safe container or freezer bag. Freeze for up to 2 weeks for best freshness and texture.
