Overview of Ingredients

Fresh milled flour
This is the star ingredient that brings a fresh, nutty touch to the breading. If you don’t have access to freshly milled flour, whole wheat flour or high-quality all-purpose flour can be good stand-ins—you just might miss that little extra depth of flavor.

Mozzarella Cheese
Full-fat mozzarella is best cheese to use here for its excellent melt and mild flavor. If full-fat isn’t available, low-fat will work, it just may not melt as well. You can use mozzarella sticks or a block of cheese.

Breadcrumbs
Freshly milled breadcrumbs made from leftover or stale bread give the crispiest texture due to their light, airy crunch. Just cube the bread and bake with oil and seasonings for 15-20 minutes at 350 degrees F. Then, blend them in a food processor until fine. Store-bought breadcrumbs work here as well. If you only have plain breadcrumbs, that works fine, just be sure to season them with some herbs.

Eggs
Eggs help create the perfect sticky layer to hold the flour and breadcrumbs. If you need an egg substitute, a mixture of milk and a little cornstarch can work in a pinch.

Oil for frying

A neutral oil with a high smoke point, like avocado oil, is ideal to fry your mozzarella sticks evenly without burning. Avoid olive oil as it has a lower smoke point and may alter the flavor.

Tips for Success

#1 Chill the cheese sticks
Before breading, freeze the mozzarella sticks for at an hour; this helps them hold their shape during frying and prevents cheese from oozing out too early. It’s a simple step that saves you from a gooey mess.

#2 Use a thermometer for perfect oil temp
Maintain the oil temperature around 350°F (175°C) to get the crispy crust without burning. Too hot and the coating burns; too cool and they absorb oil and get soggy. A kitchen thermometer pays off here.

#3 Don’t overcrowd the pan
Frying too many sticks at once lowers the oil temperature and leads to greasy results. Fry in small batches to keep the temperature steady and every stick perfectly crispy.

#4 Drain on paper towels or wire rack
After frying, let the sticks rest on paper towels or a cooling rack to catch excess oil. This keeps them nice and crisp, so they don’t get soggy while you grab the dipping sauce.

Recipe Variations

Spicy Kick:
Add a bit of cayenne pepper or smoked paprika to the flour or breadcrumb mixture for a subtle heat that wakes up the flavors.

Herbed Flavor:
Mix dried Italian herbs or fresh chopped parsley into your breadcrumbs for an aromatic touch.

Cheese Mix-Up:

Baked Version:
If frying feels like too much, bake the sticks on a parchment-lined tray at 400°F until golden and crisp. It’s a lighter option that still satisfies.

Troubleshooting Common Problems with this Recipe

Cheese Leaks Out During Frying
Make sure to freeze the breaded mozzarella sticks before frying. This extra step helps the coating set so the cheese stays put. Also, don’t fry at too low a temperature, or the sticks will need to stay in oil longer, increasing the chance of leakage.

Breading Falls Off
Thoroughly dry the cheese, and evenly coat it in flour first before dipping in flour, egg and breadcrumbs. Press the breadcrumbs firmly for a better hold, and let the breaded sticks rest in the fridge or freezer for at least an hour before frying.

Oil Temperature Isn’t Consistent
Use a thermometer to monitor oil temperature. Too hot will burn the breading; too cool will soak oil into the coating making it soggy. Adjust your heat as needed.

Breading Is Not Crispy
Fresh milled flour can behave differently, so make sure your oil is hot enough and don’t overcrowd the pan, as adding too many sticks lowers the oil temperature. Also, drain on paper towels immediately after frying.

Sticks Are Greasy
Drain the fried sticks well and maintain oil temperature as mentioned. Too low a temperature makes the sticks soak oil rather than crisp.

Freezing & Storing Leftovers

Freezing:
Proceed with all of the directions until the frying. Place them in a single layer on a tray and freeze until firm. Transfer to an airtight container or freezer bag for up to 1 month. Fry using the instructions given.

Storing:
Keep leftover mozzarella sticks in an airtight container in the fridge for up to 2 days. To keep the coating crispy, reheat using an oven or air fryer. Avoid microwaving if possible, as that softens the crust.

How To Reheat

Oven Method
Preheat your oven to 375°F (190°C). Place mozzarella sticks on a baking sheet lined with parchment paper or a wire rack to allow air circulation. Heat for about 8-10 minutes, flipping halfway, until warm and crispy.

Air Fryer Method
Preheat the air fryer to 350°F (175°C). Arrange the sticks in a single layer in the basket, and heat for 4-6 minutes, shaking halfway through for even crisping.

Microwave Method
Place mozzarella sticks on a microwave-safe plate and cover with a paper towel to avoid splatters. Heat on medium power for about 30-45 seconds, but note this may soften the crust. For better texture, finish in a hot skillet or toaster oven.

Skillet Method
Heat a non-stick skillet over medium heat with a small drizzle of oil. Warm the mozzarella sticks for 3-4 minutes, turning gently to heat all sides without burning.

Extra FAQs

Can I use whole wheat flour instead of fresh milled flour?
Yes, whole wheat flour will work fine but may have a milder flavor and different texture compared to fresh milled flour.

Is it necessary to freeze the mozzarella sticks before frying?
It’s highly recommended because freezing firms up the coating and cheese, preventing the cheese from leaking out during frying.

Can I bake these instead of frying?
Absolutely. Baking at a high temperature still yields a crispy crust and gooey center with less oil.

How long do mozzarella sticks stay good after frying?
For best taste and texture, eat within 2 days when stored properly in the fridge.

Can I prepare these ahead of time?
Yes, you can bread and freeze them before frying.
