- 4.5 - 5 cups freshly milled whole grain flour I like a 50/50 mix of hard red and hard white wheat
- 1 tbsp yeast
- 1 tsp vital wheat gluten
- 1 tbsp sunflower lecithin
- Egg Wash optional:
- 1 egg
- 1 tsp water
- sesame seeds
Instructions
- Grind wheat berries to make flour
- Add water to the mixer and turn on low
- pour salt into hot water to dissolve
- add olive oil and honey while mixing
- add half of the flour
- add yeast, lecithin and gluten
- continue mixing
- add the remainder of the flour until the dough starts to become less wet and pulls away from the sides of the mixing bowl
- knead in mixer or by hand for 7-10 minutes until smooth and elastic
- cover dough and allow to rise until double in size
- once doubled, separate dough into 12-15 balls of dough, depending on the size of the buns you want to make
- shape the buns by using the palm of your hand and tucking the dough into the center of the ball creating a smooth surface on the outside
- place the shaped buns into a greased casserole dish
- cover and allow to rise until double in size, again.
- once doubled in size and fluffy
- preheat oven to 400* F
- mix up egg wash and brush it over the top of the fluffy, not-baked hamburger buns then sprinkle with sesame seeds
- bake for 10-14 minutes depending on bun size
- buns are done when the tops are golden brown
- ENJOY!
