¾ cup sugar (135 grams)

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ cup butter, melted (58 grams)

1 egg

¾ cup fresh squeezed orange juice

1 tablespoon orange zest

2 cups fresh cranberries 

Glaze:

¾ cup powdered sugar (75 grams)

2-3 tablespoons fresh squeezed orange juice

½ teaspoon orange zest

Directions:

  • Preheat oven to 350 degrees F.
  • Grease or line a loaf pan with parchment paper. 
  • In a large mixing bowl, whisk together the flour, salt, baking powder, baking soda, sugar, and cinnamon in a large bowl. 
  • In a small bowl, whisk together the egg, orange juice, orange zest, and melted butter.
  • Mix the wet ingredients into the dry ingredients, then gently fold in the cranberries.
