Ingredients

Loaf:

  • 2 cups freshly milled soft white wheat flour finely milled (230 grams)
  • ¾ cup sugar 135 grams
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup butter melted (58 grams)
  • 1 egg
  • ¾ cup fresh squeezed orange juice
  • 1 tablespoon orange zest
  • 2 cups fresh cranberries

Glaze:

  • ¾ cup powdered sugar 75 grams
  • 2-3 tablespoons fresh squeezed orange juice
  • ½ teaspoon orange zest

Instructions

  • Preheat oven to 350 degrees F.
  • Grease or line a loaf pan with parchment paper.
  • Mix together the flour, salt, baking powder, baking soda, sugar, and cinnamon in a large bowl.
  • In a separate bowl, whisk together the egg, orange juice, orange zest, and melted butter.
  • Mix the wet ingredients into the dry ingredients, then gently fold in the cranberries.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes.
  • Allow the loaf to cool for about 10 minutes before removing from the pan.
  • For the glaze, mix together all ingredients.
