What Makes This Recipe Great

Freshly milled flour brings a unique texture and flavor. Using flour that you mill yourself adds a natural, hearty quality to the dough, making each bite a bit more nutritious and full of wholesome goodness that you won’t get from store-bought options.

A generous apple filling with warm cinnamon. The sweet and slightly tart apples mixed with cinnamon create a blend of cozy and bright flavors that perfectly complement the soft dough, offering a delightful balance of taste and texture.

Easy yet impressive. While it looks like a bakery-worthy creation, the process is simple enough for home bakers of any skill level. Plus, the rewarding aroma and the beautiful golden rolls make it feel like you’ve created something truly special.

Overview of Ingredients

Fresh Milled Flour
Freshly ground flour gives the dough a rich, nutty flavor and helps the rolls develop a tender crumb. If you don’t have access to a grain mill, you can substitute with high-quality all-purpose flour, though the texture will be a bit lighter.

Apples
Apples provide a juicy burst of sweetness and a bit of tartness that brightens up the cinnamon roll experience. Granny Smith or Honeycrisp apples work well, but you can use any firm apple you prefer.

Cinnamon
This warm spice pairs perfectly with the apples and adds depth to the filling. If you’re hesitant with spices, start with a smaller amount and adjust to your taste.

Brown Sugar
Brown sugar adds moistness and a rich caramel undertone to the filling. You could substitute with coconut sugar for a slightly different flavor or white sugar if you’re in a pinch.

Tips for Success

#1 Don’t overmix the dough
Mix until everything just comes together to avoid developing too much gluten, which can make the rolls tough instead of soft and tender. A light hand will get you fluffy rolls every time.

#2 Let the dough rise in a warm, draft-free spot
Yeast loves a cozy environment. If your kitchen is chilly, try placing the dough near a warm appliance or inside a turned-off oven with the light on to encourage a good rise.

#3 Use room temperature butter for the filling
Softened butter spreads easily and helps the sugar and cinnamon stick to the apples better. Cold butter can tear the dough and create lumps in your filling.

#4 Slice the rolls gently
When cutting your rolled dough into segments, use a sharp knife or dental floss to avoid squishing the dough and losing that airy texture.

#6 Brush the rolls with butter after baking
Adding a light brush of melted butter while the rolls are hot keeps them moist and gives the tops a lovely shine.

How to Make the Best Apple Cinnamon Rolls with Fresh Milled Flour

Ingredients:

  • Dough:
  • 1 1/2 cups  warm water (330 grams)
  • 2 teaspoons salt
  • 1/2 cup olive oil (100 grams)
  • 1/2 cup honey (130 grams)
  • 5-6 cups fresh milled flour – I like to use a blend of 50/50 hard red and hard white wheat for this recipe (675-810 grams)
  • 1 tablespoon instant yeast
  • 2 teaspoons lemon juice
  • Filling:
  • 4 apples, diced (granny smith, gala, honeycrisp) (475 grams)
  • 1 tablespoon butter
  • 1 cup brown sugar, maple sugar, coconut sugar, or a mixture (120 grams)
  • 1 ½ tablespoons cinnamon
  • ½ teaspoon nutmeg
  • ⅓ cup water (72 grams)
  • 7 tablespoons softened butter (100 grams)

Glaze:

  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 2 teaspoons whole milk

Directions:

  • Combine the wet ingredients and salt in the bowl of a stand mixer (water, salt, oil, lemon juice and honey).

  • Allow the dough to rest in the mixer for 10 minutes before proceeding. This will make a softer loaf and helps to hydrate the fresh flour.

  • Add yeast and the rest of your flour. I like to add the flour slowly, 1/2 cup at a time and watch how the dough reacts. You don’t want to add too much flour. Add just enough to where a soft dough forms and the dough begins to pull away from the sides of the bowl.

  • Knead dough until smooth and elastic. This takes about 6-8 minutes with a mixer and 10+ minutes if you are kneading by hand. Do the window pane test to ensure the kneading has been done properly.

  • Move the dough to a large, greased bowl and place somewhere warm. I like to use my barely warmed oven (preheat for a few minutes and then turn it off). Allow the dough to rise until double in size, in a warm place that takes 30-45 minutes. If rising on the counter, cover the dough and it may take longer to double in size.

Recipe Variations

Add Nuts:
Chopped walnuts or pecans add a wonderful crunch that pairs nicely with the soft apples and cinnamon.

Glaze Option:
Instead of a powdered sugar glaze, drizzle a simple cream cheese glaze or a maple cream cheese frosting for extra sweetness and tang.

Spiced Up:
Mix in a pinch of nutmeg or ground cloves into the cinnamon filling to deepen the warm spice flavor.

Fruit Swap:
Try pears instead of apples for a slightly different but equally tasty twist.

Flavor Boosters

Caramel Sauce Drizzle
A light drizzle of caramel after baking adds a rich sweetness that complements the cinnamon and apple beautifully.

Toasted Cinnamon Sugar Topping
Sprinkle a mix of cinnamon and sugar on top before baking for an extra crunchy, sweet crust.

Vanilla Bean Infusion
Add a touch of vanilla bean paste to the dough or filling to uplift the flavor with a hint of floral warmth.

Orange Zest
A pinch of grated orange zest in the filling brightens the flavors with a fresh citrus note.

Brown Butter Filling
Using browned butter instead of regular butter for the filling adds a nutty depth that makes each bite more complex.

What To Serve With Apple Cinnamon Rolls

Warm Milk or Spiced Latte
A comforting drink that complements the sweet and spicy notes in the rolls.

Fresh Fruit
A side of fresh berries or sliced apples balances the richness of the rolls with juicy freshness.

Honey Yogurt
A dollop of creamy yogurt drizzled with honey adds a tangy and sweet contrast to the cinnamon rolls.

Light Green Tea
The subtle bitterness of green tea helps to cut through the sweetness for a well-rounded taste experience.

Vanilla Ice Cream
If you’re feeling indulgent, a small scoop of vanilla ice cream alongside warm rolls transforms breakfast into dessert.

Troubleshooting Common Problems with this Recipe

Dough Is Too Sticky
If your dough feels overly sticky, don’t panic. Add flour a little at a time while kneading until it’s manageable, but avoid adding too much or the rolls will become dense.

Rolls Don’t Rise Enough
Yeast might be dormant or the rising environment was too cold. Double check your yeast freshness and try to find a warm, draft-free spot for rising next time.

Filling Leaks During Baking
This usually happens if the apples are sliced too thick or the dough wasn’t sealed tightly. Cut thinner apple slices and make sure to roll and pinch the dough firmly.

Cinnamon Flavor Is Bland
Make sure to use fresh ground cinnamon and mix it well with brown sugar. Sometimes adding a pinch of salt can also enhance the spice’s flavor.

Rolls Turn Out Dry
Overbaking or too much flour can dry the rolls. Keep an eye on the baking time and brush with butter right after baking to lock in moisture.

Freezing & Storing Leftovers

Freezing:
Wrap the rolls tightly in plastic wrap and place them in an airtight container or freezer bag. They freeze well for up to 2 months. To reheat, thaw overnight in the fridge, then warm in the oven until heated through.

Storing:
Store leftover rolls in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to 5 days, but bring back to room temperature or warm gently before serving.

How To Reheat

Oven Method
Best for: Restoring that fresh-baked texture with a slightly crisp exterior. Preheat the oven to 350°F (175°C). Place the rolls in a baking dish and cover loosely with foil. Heat for 10-15 minutes, or until warmed through.

Microwave Method
Best for: A quick warm-up when you’re short on time. Place a roll on a microwave-safe plate and cover with a damp paper towel. Heat on medium power for 20-30 seconds. Be careful not to overheat or the dough can become tough.

Toaster Oven Method
Best for: Reheating a couple of rolls with slightly toasted tops. Set toaster oven to 350°F (175°C) and heat rolls on a tray for about 8 minutes, uncovered.

Steam Method
Best for: Adding moisture if the rolls feel a bit dry. Place rolls in a steamer basket over simmering water for a few minutes until warm and soft.

Extra FAQs

Can I use frozen apples for the filling?
Yes, but be sure to thaw and drain excess moisture before using to avoid soggy rolls.

Is it necessary to peel the apples?
Peeling is optional; some prefer the texture and nutrients of the peel, while others like a smoother filling.

Can I make the dough ahead of time?
Absolutely, you can make and refrigerate the dough overnight, then roll and bake the next morning.

Is it okay to use whole wheat flour instead of fresh milled flour?
Yes, whole wheat adds a nuttier flavor and denser texture, but fresh milled flour tends to be lighter and fluffier.

Can I double the recipe?
Definitely. Just make sure you have a big enough bowl and baking dish to accommodate the larger batch.

These are AMAZING. My family loves them and I feel so much better about feeding them fresh milled goodies, knowing it has so many nutrients. I’ve made them twice now, as traditional cinnamon rolls (no apples). This last time I let them do a slow second rise, in the fridge, overnight. I pulled them 2 hours before baking to allow them to warm up and continue rising. They turned out beautifully.
