Refined Sugar Free Cobbler

This easy refined sugar free cobbler needs just 5 minutes to prep. It is so delicious that no one will ever know that it is sweetened with maple syrup! You can use peaches, blueberries or blackberries for this great recipe.

Ingredients

Cobbler Topping

  • 2 tbsp butter
  • 3/4 cup whole wheat flour soft white, freshly milled if possible
  • 2/3 cup Milk
  • 1/3 cup honey or maple syrup
  • 1 1/4 tsp. Baking Powder
  • 1/2 tsp Vanilla
  • Small Pinch Cinnamon optional
  • Small Pinch Nutmeg especially good for peaches
  • 1/4 tsp salt

Fruit/Berry Base

  • 2.5 cups fruit/berries
  • 2 tbsp Maple syrup
  • 1/2 tbsp. lemon juice

Instructions

  • Start by preheating your oven to 350* fahrenheit.
  • Measure your fruit and drizzle with 2 tbsp. maple syrup and ½  tbsp. lemon juice, stir and set aside. 
  • Melt butter in cast iron skillet over low heat. If using a baking dish, melt the butter in the dish by putting it in the preheating oven for a few minutes.
  • Combine flour, baking powder, milk, maple syrup, vanilla extract and salt in a medium mixing bowl. 
  • Pour the flour mixture over top of the melted butter and stir gently, this will make our "pie crust" for the cobbler.
  • Next, layer the fruit mixture on top of the flour mixture in the baking dish or cast iron skillet. 
  • Sprinkle with cinnamon and/or nutmeg if desired. 
  • Bake in the oven for 25-30 minutes, or until the topping is browned. The berries will fall to the bottom of the dish and the flour mixture will rise in some parts, this is what you want. 
  • Allow to cool for 5-10 minutes and serve.
  • Store leftovers in the refrigerator. 

Notes

If you are using fresh peaches, peel and slice them thinly. If you are using fresh blueberries or blackberries, no prep is needed beside normal washing. 
You can use frozen fruit in this cobbler recipe, but they will need to be thawed at room temperature before you begin. You can also use canned fruits(drained), but make sure that they don’t have added sweeteners if you are wanting to keep this cobbler on the healthier side.
