Delicious Strawberry Crisp with Freshly Milled Ancient Grains

Ingredients

  • Topping:
  • 2/3 cup rolled oats
  • 2/3 cup freshly milled Grand Teton Ancient Grains einkorn or khorasan flour
  • 1/4 cup brown sugar
  • 1/4 cup cane sugar
  • 1/4 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/2 cup salted butter melted
  • Filling:
  • 5 cups fresh strawberries chopped
  • 2 tbsp. orange juice
  • splash of vanilla extract
  • 4 tbsp. maple syrup
  • 1/4 cup freshly milled Grand Teton Ancient Grains einkorn or khorasan flour

Instructions

  • Preheat oven to 350* degrees F.
  • Combine all topping ingredients in a medium sized bowl. Mix well and then refrigerate.
  • Combine all filling ingredients into a medium sized bowl and then pour into a greased cast iron skillet or 9" pie pan.
  • Remove topping from the refrigerator and crumble the topping over the top of the strawberry mixture.
  • Bake for 25-30 minutes or until the mixture is bubble and the topping is golden brown
  • Serve as is or with a scoop of homemade ice cream for an extra special treat
