The Best Soft and Chewy Fresh Milled Molasses Cookies

There’s something undeniably comforting about the warm, rich flavor of molasses cookies, especially when they’re soft, chewy, and made with freshly milled flour. These cookies are a perfect blend of nostalgia and wholesome goodness, with deep, spiced flavors that capture the essence of fall and winter baking.

Ingredients

  • 2.5 cups soft white wheat finely milled
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. ground ginger
  • 1 tsp. ground allspice
  • 1/2 tsp. salt
  • 1/2 cup butter softened
  • 3/4 cup maple syrup or honey
  • 1/4 cup molasses
  • 2 large eggs
  • 1/2 cup coarse sugar for rolling.

Instructions

  • Into a medium sized bowl, combine flour, baking soda, spices and salt. 
  • In a second bowl, cream together the maple syrup, butter and molasses until smooth. 
  • Add eggs to the butter mixture and whisk until combined.
  • Add the flour/dry ingredients to the butter mixture until just combined, don’t over-mix.
  • Cover the bowl and refrigerate for 4 hours or overnight
  • After the dough has chilled, preheat oven to 375* F. and line a baking sheet with parchment
  • Using a teaspoon cookie scoop, scoop the cookie dough and roll into a ball with your palms. Roll the dough in the coarse sugar and place on the baking sheet. 
  • Bake for 8-10 minutes.
