Ingredients
2store bought pie crusts or use our pie crust recipe
2pintsfresh blueberries680 grams
½teaspoonlemon juice
⅓cuphoney90 grams
2tablespoonscornstarch plus 2 tablespoons water
Egg for egg wash
Coarse sugar for toppingoptional
Instructions
Add the blueberries, honey, and lemon juice to a medium pot. Bring to a simmer and cook until it is reduced by half.
Once reduced, combine the cornstarch and water, then pour into the blueberries. Simmer for several more minutes until it thickens.
Set aside to cool.
Preheat the oven to 375 degrees F. and line an 8x8 inch pan with parchment paper.
Roll out one pie crust into the shape of your pan, then place it in the pan. Use your fingers to press it so it covers the bottom of the pan.
Bake for 10-15 minutes until it starts to brown.
Allow to cool for a bit.
Once everything has cooled, pour the filling over the pie crust.
Place the other pie crust over top of the bars, or cut it into 6-8 strips and weave them to make a lattice over top.
Brush the crust with the egg wash and sprinkle with coarse sugar if desired.
Bake for 30-40 minutes at 375 degrees F. for 30-40 minutes, until the pie crust has turned golden brown and the berries are bubbling.
