Ingredients

Batter:

  • ½ cup sugar 100 grams
  • ½ cup whole milk 120 grams
  • ½ cup avocado oil 110 grams
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 ½ cups freshly milled soft white wheat flour finely milled (288 grams)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups chopped strawberries 332 grams
  • 2 tablespoons freshly milled soft white wheat flour

Glaze:

  • 1 ½ cups powdered sugar 150 grams
  • 1 tablespoon melted butter
  • 4 tablespoons finely chopped strawberries
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk

Instructions

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix together the sugar, milk, oil, egg, and vanilla.
  • Add the flour, baking powder, and salt and mix until smooth.
  • Coat strawberries with 2 tablespoons of flour, then fold into the batter.
  • Grease a 9x5 inch loaf pan and pour the batter into the pan.
  • Bake for 45-55 minutes, until a toothpick inserted in the middle comes out clean.
  • Prepare the glaze by combining all the ingredients together and pour over top of the loaf once cooled.
