Ingredients

Brownie Batter:

  • ¾ cup melted butter 173 grams
  • ¾ cup unsweetened cocoa powder 68 grams
  • ¾ cup sugar or maple sugar 120 grams
  • cup coconut sugar or brown sugar 48 grams
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 1 ½ cups freshly milled soft white wheat flour finely milled (173 grams)
  • 1 teaspoon cornstarch
  • ½ teaspoon salt

Ganache:

  • ¾ cup semi-sweet chocolate chips 140 grams
  • ½ cup milk chocolate chips 124 grams
  • cup heavy cream 56 grams
  • ½ cup candy coated rainbow chocolate chips 90 grams

Instructions

  • Preheat the oven to 350 degrees F. and grease a 9x13 inch pan with oil.
  • In a large bowl, whisk together the butter and cocoa powder.
  • Add the sugars, eggs, and vanilla, and combine.
  • Add the flour, cornstarch, and salt and whisk until combined.
  • Pour batter into prepared pan and bake for 15-16 minutes.
  • Remove from the oven and let cool completely.
  • For the ganache, heat the chocolate and heavy cream over low heat. Stir until completely melted.
  • Spread over the cooled brownies and top with the rainbow chips.
  • Allow the ganache to set before slicing.
