Ingredients

Muffin Batter:

  • 2 ¾ cup fresh milled soft white flour finely milled (317 grams)
  • ¾ cup brown sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ cup unsulphured molasses 144 grams
  • 2 eggs
  • ¾ cup avocado oil 162 grams
  • ½ cup milk 134 grams

Glaze:

  • ¾ cup powdered sugar 75 grams
  • ½ teaspoon vanilla extract
  • 2 tablespoons heavy cream

Instructions

  • For the glaze, mix the ingredients together and spread or drizzle on top of cooled muffins.
  • Preheat oven to 425 degrees F.
  • Line a 12 count muffin pan with baking cups or grease with oil.
  • In a large mixing bowl, beat together the wet ingredients.
  • In a separate bowl, combine the dry ingredients.
  • Slowly add the dry ingredients into the wet ingredients, and mix until well combined
  • Allow the batter to sit for 10 minutes.
  • Fill the muffin cups with the muffin batter all the way to the top.
  • Bake in the oven for 7 minutes at 425 degrees F.
  • Then reduce the heat to 350 degrees F, and bake for 16-20 minutes, until a toothpick inserted in the center of a muffin comes out clean.
