Ingredients

Muffin Batter

  • 2 ½ cups freshly milled soft white wheat flour finely milled (288 grams)
  • ½ teaspoon nutmeg
  • 1 tablespoon cinnamon
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder
  • ¾ cup brown sugar or maple sugar 120 grams
  • ½ cup softened butter 115 grams
  • ¼ cup sour cream or plain Greek yogurt 64 grams
  • 2 eggs
  • 1 teaspoons vanilla
  • ½ cup milk 104 grams
  • 1 ½ cups diced apples honeycrisp, fuji, gala (205 grams)

Streusel Topping:

  • ¾ cup fresh milled soft white wheat flour finely milled (86 grams)
  • 4 tablespoons brown sugar or maple sugar
  • 1 teaspoon cinnamon
  • ¼ cup melted butter 58 grams

Instructions

  • Preheat the oven to 400 degrees F.
  • Prepare two muffin tins with liners or grease.
  • In a medium bowl, whisk the flour, nutmeg, cinnamon, salt, and baking powder.
  • In the bowl of a stand mixer, beat the butter and sugar together.
  • Add the sour cream, eggs, and vanilla and mix until combined.
  • Add the flour mixture into the wet ingredients and mix until combined.
  • Add the milk and combine.
  • Gently mix or fold in the apple chunks.
  • Scoop into the prepared muffin tins.
  • Prepare the crumble topping by stirring the dry ingredients together.
  • Add the butter and mix together.
  • Sprinkle the streusel on the tops of the muffins and bake for 18-20 minutes until golden brown.
