Ingredients

  • 1 ¾ cups rolled oats 175 grams
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¾ cup cashew almond, or peanut butter (175 grams)
  • ¼ cup maple syrup 84 grams
  • ½ cup unsweetened applesauce 113 grams
  • 1 medium mashed banana (94 grams)
  • ½ cup dried cranberries 60 grams
  • cup raisins 48 grams
  • ¼ cup pumpkin seeds 50 grams
  • 3 tablespoons ground flaxseed

Instructions

  • Preheat the oven to 325 degrees F. and line a baking sheet with parchment paper.
  • Add all of the ingredients in the bowl of a stand mixer and mix until combined.
  • Use a ¼ cup measuring cup and scoop the dough out onto the prepared baking sheet. Use your hands to gently press the cookies down a little bit. They will not spread during baking.
  • Bake for 18-22 minutes.
