Ingredients
1cupcornmeal152 grams
¾cupfreshly milled soft white wheat flourfinely milled (86 grams)
2teaspoonsbaking powder
¼teaspoonbaking soda
1 ½teaspoonssalt
1 ½tablespoonssugar
3tablespoonsgrated/minced onion
1egg
¾cupbuttermilk170 grams
Beef tallow or refined coconut oil for frying
Instructions
Add coconut oil to a large pot and heat to 350 degrees F. Fill it up so it’s at least 4-6 inches deep.
In a medium bowl combine the dry ingredients.
In a separate bowl combine the wet ingredients.
Add half of the dry ingredients to the wet ingredients and stir. Add the remaining half and stir just until combined.
Let sit for 10 minutes.
Once the oil is heated, use a cookie scoop (about 2 tablespoons), scoop the batter, and carefully drop it into the oil.
Cook for 2-3 minutes, then flip over and cook another 2-3 minutes.
