Ingredients

Brownie Batter:

  • 7 tablespoons butter (100 grams)
  • 6 ounces white chocolate
  • ½ cup sugar (90 grams)
  • 1 egg
  • 2 egg yolks
  • ½ cup strawberry puree
  • ½ teaspoon vanilla
  • 1 ¾ cups fresh milled soft white wheat flour finely milled (202 grams)
  • ¼ teaspoon salt

Glaze:

  • 2 ½ tablespoons strawberry puree
  • 1 tablespoon melted butter
  • ¾ cup powdered sugar (75 grams)
  • ½ teaspoon vanilla
  • Dash of salt

Instructions

  • To make the strawberry puree, hull and quarter 10-12 ounces of fresh strawberries and blend in a blender until smooth.
  • Preheat oven to 325 degrees F.
  • Line an 8x8 glass pan with parchment paper.
  • Melt butter and white chocolate in a saucepan over very low heat, stirring constantly. Watch carefully - white chocolate will burn quickly!
  • Take the saucepan off the heat and stir in sugar and salt.
  • Add in egg and egg yolks.
  • Stir in strawberry puree and vanilla.
  • Stir in flour, whisking until smooth.
  • Pour the strawberry brownie batter into prepared pan and bake for 20-25 minutes, until a toothpick inserted in the center of the brownies comes out clean.
  • To prepare the glaze, mix all ingredients together in a large bowl.
  • Let brownies cool, then spread the glaze over top of the brownies.
